Magic Peanut Butter Cookie

1 Cup Peanut butter (Crunchy or Creamy)
1 1/3 Cups Splenda for baking
1 Egg
1 Tsp. Vanilla

In a mixing bowl combine the peanut butter, 1 cup Splenda , the egg and vanilla, stir well with a spoon ( I use my kitchen aid mixer) Roll the dough into balls about the size of a walnut. Place the balls onto a baking sheet lined with parchment paper. With a fork dip it into the reaming 1/3 cup of Splenda and press a crisscross design on each cookie. ( I made the design then sprinkled colored sugar crystals) Bake at 350 for about 12 minutes

My daughter loves these quick and easy cookies.
