Beef POM Wonderful

A few weeks ago I received an e-mail from Ryan Wilkins of POM Wonderful, he went on to tell me how much he enjoyed looking at our blog and all of our great recipes. Ryan asked me if I would like a case of POM Wonderful to try and create a unique recipe for our blog, I was very excited to give it shot, so I said yes. My mind started to spin immediately trying to think of just what I could make with this fantastic tasting and colorful juice. Then, just like in the cartoons, a light flashed on above my head and I knew exactly what I was going to make. When I spoke to my husband about my idea, he thought it would work, and turn out. He thought it would be a perfect recipe. Thank you again Ryan, for thinking of us and giving my husband and I a chance to try your yummy juice in a new way.

2 Lbs. - Stew Meat
3 C. - Beef Broth
2 C. - POM Wonderful
1 Tsp. - Salt
1/2 Tsp. -Dried Marjoram
1/2 Tsp. - Dried Thyme
1/4 Tsp. - Pepper
1 C. Diced - Mushrooms

In a large slow cooker place the beef, broth, POM, and spices then stir to combine. Cover and cook on high for 8 hours. About 4 hours into cooking stir in the mushrooms then recover and cook for the last 4 hours. We like a thicker gravy than this, so after cooking, I thickened it with slurry of corn starch and POM juice. We then served the Beef over some cooked pasta but rice would also be great. We think this recipe turned out amazing and we can’t wait to enjoy it again.
