Pesto Foccacia Wedges



My friend Susen was over a few weeks back and we were talking about food, she told me of how she makes mock foccacia bread and what kind of toppings she puts on hers to make it almost like a pizza. I thought the sound of this was so simple and could be virtually changed a million ways, so this is what my version came out like...


1 - 8 Count Crescent Rolls
EVOO
Kosher Salt
Basil Pesto
Parmesan Cheese

Open the roll of crescents and lay out each wedge flat onto a parchment lined baking sheet, brush an even layer of EVOO onto each wedge then sprinkle with some kosher salt. Spread an even layer of pesto onto each piece then top with Parmesan cheese. Bake in a 375 degree oven until golden and crispy, about 15 minutes. These would be fabulous alongside soup, spaghetti or all alone.
