Pumpkin Bread



With all of the great pumpkin bread pictures I have been seeing on other blogs, it inspired me to make some this year too. I decided what a better way to close out October than with fabulous pumpkin bread. My husband made a few modifications to my original recipe and I feel that it turned out even better.

2 C. Flour
1 C. Sugar
1/2 Tsp. Baking Soda
1 Tsp. Baking Powder
1 C. Pumpkin Pie Filling
1/2 C. Shortening
2 Eggs
1/2 C. Raisins
1/3 C. Chocolate Chips
1/3 C. Cinnamon Chips

In the kitchen aid or with a hand mixer cream the shortening and sugar, add in the eggs and pumpkin and mix until smooth. In a mixing bowl stir together the flour, baking soda, and baking powder. When the pumpkin mixture is smooth slowly add in the flour mixture and stir until well combined, then fold in the raisins and chips. Put into a well greased bread pan and bake at 350 for 60-70 minutes, or until a tooth pick comes out clean. Let sit in the pan for 10 minutes then remove to cool on a wire rack.

I love the idea of using cinnamon chips! I love all things cinnamon so this is perfect for me.
