Harvest Caramel Apple Cake



One of my drivers at work gave me a bag of apples from his yard, I wanted to make something that made me think of Fall and Halloween. I went home and looked through my old recipes and found one that I have not made in years. This is a very rich and gooey desert, a little goes a long way. Last but not least it is simply to DIE for.


4 C. Sliced Apples (Any Kind)

1 Tbs. Vanilla

2 Eggs

3 C. Flour

3/4 C. Oil

1 Tsp. Baking Soda

1 Tsp. Baking Powder

1 Tsp. Nutmeg

1 Tsp. Pumpkin Pie Spice

1 Tbs. Cinnamon

1 1/2 C. Sugar (Could also use Splenda for Baking)

1/2 C. Caramel Ice Cream Topping (Sugar Free Works TOO)


In a large mixing bowl place in the flour, baking soda, baking powder & spices. Place the sliced apples into another bowl and mix with the oil. Once the apples are coated in the oil add them into the flour mixture, stir to coat. In a small bowl mix the eggs, sugar and vanilla, once combined add to the flour and apples. Completely mix all ingredients together, (the batter will be very thick). Once fully mixed stir in the caramel sauce, spray a 13x9 cake pan and spread the batter in evenly. Bake at 350 for 45 minutes to an hour. Cake is done when a toothpick comes out clean. Serve warm or cold with French vanilla ice-cream (SUGAR FREE would work too)and a drizzling of extra caramel sauce.

frankly, this looks more delicious than pretty much every dessert i've ever been served in a restaurant. the presentation alone is stunning, but the actual dessert itself is mesmerizing. i love it. :)

Oh my Oh my!! That looks so good and gooey. I was going to make a glaze for my cake and now I'll have to make your cake with the caramel sauce!! I love the tower of cake.

Hi I made this cake today - it looked sooo good. I followed the directions and it didn't cook right. It seems there were either too many apples or not enough flour mixture.

I don't think I did anything wrong, but was wondering if you could advise me why there seemed to be very little "cake" and mostly apples.

I was so excited to see that you had made my cake, but then turned sad very quickly to see that it didn't turn out correctly. I thing I did just notice is that i failed to mention that I DO NOT peel my apples, leaving the peel on gives the cake a little less moisture and and more integrity to the apple. Also the picture may look a little deceiving, it does not cook up like most cakes the texture is more like a bread pudding. I hope this helps in weather or not you wish to give it another try. Thanks

Thank you so much for answering!! I may have added too many apples - now that I think about it, I'll measure correctly. I'm glad to know the texture is different than a normal cake! My son loves your blog and sent it to me - now I love your blog, too!!! I read almost every recipe!!

How much caramel sauce should be added? I am sorry but don't see the info on that in the ingredients list.
