Turkey Rice Wraps
We had a head of lettuce left from doing burgers over the weekend and I wanted to use it in a way other than salad. So I thought how about trying our hands at home made lettuce wraps. We have had lettuce wraps at PF Changs and OMG they are so good, we just really made it up as we were cooking and just utilizing what we had on hand. They were very quick, easy and yummy.
1/2 Lbs. Ground Turkey
1/2 Small Chopped Onion
1 Tbs. Chopped Garlic
1 1/2 Tbs. Plum Sauce
1 Tbs. Worchester Sauce
1 1/2 Tbs. Rice Vinegar
2 Tbs. Soy Sauce
4 Tbs. Teriyaki Sauce
1 Tbs. Johnny’s Garlic Season
1 Tsp. Ground Ginger
1/2 C. Frozen Corn Kernels
1/4 C. Shelled Pistachio Nuts
1 1/2 C. Cooked Rice (Instant would be fine)
2 Tbs. Sesame Seeds
Half Head of Lettuce
Cook rice according to the directions on the bag, while the rice is cooking heat EVOO in the bottom of a frying pan over medium high heat. Cook the turkey and onion until the meat is no longer pink and the onion is translucent. Season with the garlic, ginger and stir in the frozen corn, mix your sauce together and add to the pan and stir. Cover and simmer for 8-10 minutes then stir in the cooked rice and nuts. Spoon into a lettuce leaf then fold in the bottom, the sides and roll it up. Serve with your favorite dipping sauce and enjoy.
