Tator Tot Spam



1/2 Small bag of tater tots (More depending on family size)
1 Can Bacon flavored Spam (Or whatever flavor you like)
6 Eggs (More depending on family size)
1 Cup grated cheese (I use cheddar)

Season to taste with Salt, Pepper & Garlic powder


In a large skillet heat enough EVOO (Extra Virgin Olive Oil) to coat the bottom of the pan, place the tater tots in the pan and fry over medium high heat breaking them down some until golden brown. After they are golden brown take them out of the pan and set aside. Remove the spam to a cutting board and dice, when ready add it to the hot pan and fry until golden brown. When the spam is ready place the tater tots back into the pan and break in your eggs. Cook and stir until the eggs whites are fully cooked and no longer runny. When the eggs are done sprinkle on the cheese and let it melt.

Serve hot with a bowl of fruit or maybe a cup of yogurt for a quick and easy Sunday breakfast.
