Caramelized Pineapple with Ice-Cream
1 large can of pineapple rings drained (fresh would be ok)
1/2 Cup Brown Sugar ( Splenda would be ok )
1/4 Cup Margarine (Real butter would be ok)
Vanilla Ice-Cream (Whatever brand you like )
In a medium sauté pan melt the butter over medium to medium – high heat, when melted add in the brown sugar and melt it. After the sugar has melted add in the pineapple rings ( I cut mine) and cook them stirring as to not burn the butter/sugar mixture. Cook them until the butter/brown sugar mix has reduced and caramelized the pineapple, this took about 10 – 15 min.
Serve hot over the ice-cream and drizzle on some of the extra sauce.
My husband and kids loved it
