Our Philly Cheese Steak Sammies

1 Beef roast (Size depends on your family)
2 Boxes (8cup) of beef broth (Or enough to cover the meat)
1 Medium onion chopped
1 Medium onion sliced
3 Tbs. chopped garlic

Season to taste (I used Salt, Pepper, Garlic powder & Montreal Steak Season)

Hamburger buns or Hoagie rolls

Cheese Sauce :

1 Can Cheddar cheese soup
1/2 Cup Cubed Velveeta cheese
1 Cup Milk

Place half of the chopped onion in the bottom of a crock pot, place the roast on top of the onion and place the rest of the onion on top of the meat. Cover the meat with the broth and add your seasoning. Cover and cook on high for 5 hours. After 5 hours take the meat out and drain of the juice leaving about 2 Cups behind (to keep the meat moist). Shred the beef and place back into the crock pot on low for another 4 hours. Just before you are ready to serve sauté the sliced onion in a mix of extra virgin olive oil and butter, cook until soft. In a sauce pan heat the soup, milk & Velveeta on medium low being careful not to burn the sauce.
Split open the bun and place down some meat, sautéed onion, cheese sauce and the top bun. Serve with a simple salad and fruit.

YUMMO!!
