Sweet Tater Tot Casserole



My last recipe idea for October could not be any easier or tastier. This dish can be made quickly on any weeknight; it would be a great dinner idea to make before all of the little ones head out for Trick or Treating. My husband who is not a big fan of sweet potatoes, but is actually starting to really loved this dish. This is not a new dish by any means just a small twist on an old family favorite that everyone has a version of.


1 Lb. - Ground Hamburger, Turkey or Chicken
2 - 20 oz. - Alexia Sweet Potato Tots (Puffs)
1- 10 oz. - Cream of Chicken Soup
1 C. - Shredded Mexican Cheese Blend
1 Tsp. - Salt
1 Tbs. - Johnny's Garlic Seasoning
1/2 - Soup Can of Milk

Grease an 8x11 baking dish with cooking spray. Cook the ground meat with seasonings over high heat until no longer pink and a little caramelized, once browned add the soup and the half can of milk to the meat mixture. In the baking dish layer in some of the tater tots then cover with some of the meat mixture and top with cheese, repeat layers ending with cheese. Bake in a 400 degree oven for 30 minutes or until brown and bubbly.
