Strawberry Margarita Cakes



I was talking with my friend Susen one day about her new job at Beaverton Bakery and all of the yummy cupcakes she will be making, when I had this idea to take my favorite adult beverage and turn it into a cupcake. If this idea was not weird enough my husband then said he wanted to actually bake this cake in the glass this drink would normally be served in. So then of course I had the idea to decorate it just like the drink, they turned out so darn cute and very good. We also did some in the regular cupcake form, so either way these will be a big hit at your next summer gathering.





1 - Pillsbury Strawberry Cake Mix
3 - Eggs
1/3 C. - Oil
1/3 C. - Jose Cuervo Clasico Tequila
2/3 C. - Strawberry Margarita Mixer
1 Tub - Betty Crocker Fluffy White Frosting
Straws
Cocktail Umbrellas
Red Cookie Sprinkles
Cupcake Liners

In a mixing bowl place the first 5 items and beat with electric mixer until smooth. Fill a margarita glass about ¾ full with batter and the cupcake liners you would fill them about 2/3 the way. If you are baking in the glass, cook at 220 degrees for 60 min (or until done, you can use a lower heat but then extend your cooking time) and if you are using the liners bake at 350 degrees for 18-20 minutes. Let cool completely then frost and decorate with umbrellas and snipped straws, I used the candy sprinkles on the cupcakes only but you could try to rim the glass with them just like an actual drink.
