While sitting at work one day I had this crazy idea pop in my head for a posting, but the more I gave it thought it really didn't seem all that crazy after all. I have this big love for sweet cucumber chip pickles and mini garlic dills, it occurred to me that if these little wonders were fabulous as is, then they would have to be out of this world good deep fried. OMG...deep fried pickles!!!
11 - Sweet Cucumber Chip Pickles (drained & dry)
11 - Mini Garlic Dills (drained & dry)
1 - Egg
1/3 C. - Milk
1/3 C. - Flour
1 Tbs. - Johnny's Garlic
1/4 Tsp. - Cayenne
1/2 Tbs. - Adobo Seasonings
2/3 C. - Panko Crumbs
Salt
In a small shallow bowl mix the milk and egg together. In another small shallow bowl mix the flour, cayenne, adobo and garlic together, and in the last bowl add the Panko crumbs. One at a time dip the pickles into the egg mixture then into the flour. Shake off the excess flour and dip back into the egg then cover in the Panko crumbs. Lay the covered pickles in a single layer onto a baking sheet, when all pickles have been covered place the tray into the freezer for 1 hour (this will ensure the coating sticks to the pickle in the deep fryer). Heat a deep fryer to 375 degrees and cook a single layer of pickles at a time for 1 minute, place on paper towel to drain. Sprinkle with salt, they are good hot or cold.

I made fried pickles one time! Except I used sliced pickles instead of whole. This method looks really pickle-tastic too!
Fried pickles!! Here in NC we love 'em. I personally prefer them sliced and fried, though mostly you find the dill spears fried. I don't think I've ever had the sweet ones fried, but bet it's delicious! My favorite place around here to get fried pickles is actually (and I hate to say this) a CHAIN restaurant called Mimis that fries up dill chips in buttermilk batter and serves with ranch dressing and a fancy coleslaw on the side. We were there this week for Sunday brunch and the next table over had ordered some and I was literally drooling, wishing we had ordered some, not that they would go with my Papas Y Huevos, DS's eggs benedict or DC's Pain Perdu. (Mimi's has a New Orleans theme.)
