Crunchy Tater Casserole

"Happy Easter to Y'all"





The Dunkin Family was having an Easter brunch at John & Cheryl's house today, I was asked by Cheryl to bring a certain potatoes dish that someone on her side of the family always makes for gatherings. I was very please at the fact that she would entrust me with making this dish and I of course didn't want to disappoint her by not doing my best. She did say I could add whatever I wanted to the recipe so to make it more my own that is exactly what I did.


2 Lbs. - Frozen Hash Browns
1 Can - Cream of Chicken Soup
8oz. - Sour Cream
2 C. - Grated Cheddar Cheese
2 C. - Frozen Corn Kernels
4oz. - Diced Green Chilies
2 C. - Crushed Yellow Corn Chips
½ C. - Melted Butter
Salt & Pepper

Mix all of the above ingredients except the melted butter and chips. Place into a buttered 13x9 or individual ramekins. Mix the crushed chips with the butter and top your tater casserole. Bake in a 350 degree oven for about 1 hour.

She entrusted you with one of her families sacred recipes? That is pressure! There is always that fear that it will, "not be how Mom does it" or whatever. I'm so glad it turned out well for you! Happy Easter!

Don't you love this casserole. I made something similar, but I think I'm going to have to try yours next time, I love all the veggies! Glad you had a good Easter!

We love tater tot casserole in this house and will definitely try adding the corn and chilis. And the crunchy chips on top of course.
