10 Cheese Bacon Mac & Cheese



My husband and I simply love to watch Guy Fieri on Diners, Drive-ins' & Dives, we go gaga for his fun antics & witty charm. He goes to some extremely amazing places and gets to try some of the best food our great country has to offer. We wish at times we could have a job like his, drive a classic car, travel around the USA and eat some awesome food. But since we can't we will do the next best thing and make a recipe from his Triple D cookbook. This recipe was adapted from the Eveready Diner in Hyde Park N.Y., they had a wonderful sounding 3 cheese Mac & Cheese that we took it to a whole new level.




1 Tbs. - Kosher Salt, plus more for the pasta water
1 Lbs. - Elbow Macaroni
6 Tbs. - Unsalted Butter
6 Tbs. - All Purpose Flour
3 C. - Cold Milk
1 C. - Heavy Cream
1 Lbs. - 4 Cheese Mexican Blend
8 Oz. - 6 Italian Cheese Blend
½ Lbs. - Diced Cooked Bacon
1 Tbs. - Pepper
2 C. - Panko Crumbs

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook, stirring occasionally for about 8-10 minutes. Melt the butter in a large sauce pan over medium heat. Sprinkle the flour over the butter and cook, whisking to make a roux for about 2 minutes. Add the milk and whisk until smooth. Reduce the heat to low, cook and stir until thick. Add the heavy cream, cheeses, 1 tbs. salt & pepper, cook until the cheese is fully melted. Add the cooked pasta and bacon to the cheese sauce and mix well. Transfer to a 9x13 baking dish or individual serving dishes and cover with the Panko crumbs. Bake the Mac & Cheese until hot and golden brown, about 15 minutes.

Guy does eat some incredible food and this looks amazing as well. It does sicken me sometimes at the size of the bites that he takes and the amount of food he has in his mouth when he starts talking about how amazing it is (don't hate me!) :)

I simply can not get my mind around the amount of cheese (and other dairy) in this dish! It looks fantastic but one bite has to be a day's worth of calories.

Diners ,Drivins and Dives is my favorite Food Network show!!You know what I like about Guy, he totally enjoys eating, I love to watch him dig into food on that show!! His mac and cheese has to be good, the picture looks fantastic!

Wow! What a luscious macaroni and cheese. You had me at bacon but adding cream and panko crumbs on top make this a sure winner for special homespun occasions.

Dear Anonymous--

Flour measurement is typically equal to the butter measurement in order to make a roux. So in this case it would be 6 Tbls.

I am gonna have to make this one!

Dear Anonymous, My bad for not noticing that I had left the bat of info out of the recipe, I will get that fixed very soon. Thanks Chinyaray for responding inmy absence, you are absolutely correct that the butter and flour are always equal amounts.

when i am cooking i usually add bacon because the taste is really delicious. Actually the bacon for the breakfast is really good i enjoyed a lot. Although the ingredients of the meals be simply if you chose the right ones,the taste will be wonderful.
