Hawaiian BBQ Chicken



During the winter months I really love to use my crock pot to make Sunday night dinner, because if you’re anything like us on Sunday we are busy with housework and when night falls it’s nice to have dinner all ready and waiting for you to sit down and enjoy it after a hard day of chores. I have a cook book of 101 things to do with a slow cooker and this is just one of the great recipes I have made out of it.


4 to 6 Boneless, Skinless Chicken Breast
1 – 8 oz. Crushed Pineapple
1 – 16 oz. Jack Daniels Honey Smokehouse BBQ Sauce
4 to 6 C. Cooked Rice


Place meat into a greased 3 ½ to 5 quart slow cooker. Combine the pineapple and BBQ sauce and pour over the meat. Cook on high for 3-4 hours or on low for 6-8 hours. When the meat is done, use 2 forks and then shred the chicken, stir into the sauce then serve over rice.

i love pineapple in savory dishes--perhaps i should move to hawaii and just bask in the sun and eat pineapple chicken all day. sounds good to me. :)
