Birds in a Nest

I have been making this breakfast for the kids ever since they were little, but oddly enough my husband said that he has never had it. It is so quick and easy not to mention yummy that I can’t believe he has never experienced Birds in a nest or as some may call Toads in a hole.

4 Thick Sliced Sourdough French bread
7 Eggs
2 Tbs. Cinnamon
1/2 Tbs. Nutmeg
1 Tbs. Vanilla
3 Tbs. Milk

Melt some butter in a frying pan over medium heat. Lay the bread out on a cutting board and cut circles out of the center of each piece using a biscuit cutter. In a pie pan break in 3 eggs and mix in the cinnamon, nutmeg, vanilla and milk. When the butter is ready coat each piece of bread on both sides with the egg mixture and place into the hot pan. Once you have all 4 pieces in the pan break an egg into each hole of the bread. Cook until the egg and bread are done on the bottom and flip over to cook the other side. Serve hot with butter and syrup.
