Welcome to November!!!! This month we will be sharing side dishes and leftover ideas for that wonderful Thanksgiving Day Turkey. Our first side dish is one my husband and I are both really excited to try, we both really love corn and we processed many ears of sweet corn over the summer so this dish to us was already a winner in our hearts.
6 ears - Sweet Corn (off the cob)
1/2 C. - Milk
1/2 C. - Heavy Cream
1/2 C. - Cheddar Cheese (shredded)
1/2 Tsp. - Cayenne Pepper
2 Eggs (beaten)
Salt & Pepper
Crispy Onion Rings
Heat oven to 350 degrees, in a large bowl combine the milk, cream, cheese, eggs, salt, pepper and cayenne. Add the corn and mix well, pour into a greased casserole dish and bake for 35 minutes or until set and golden brown. Let cool slightly then top with crispy onion rings and serve.

This sounds excellent! I LOVE corn casserole on Thanksgiving (for some reason that's the only time we make it) and this seems like a really cool version!
So this looks like the absolute perfect mix between creamed corn and cornbread. Which, of course, means it looks freaking delicious!
