Thanksgiving Leftover Sliders

My final November posting is not really a recipe but just a method, so you can play with it any way you wish. This is our contribution to Thanksgiving left over ideas, we all have so much food left over whether we cooked or brought home a plate home from a friends or family gathering. Don't get me wrong I love leftover turkey pot pie or gallons of turkey soup but we went a little simpler and quicker this year with our leftovers.

King's Hawaii Butter Rolls
Turkey
Ham
Stuffing
Jellied Cranberry
Stuffing
Gravy

Open the dinner roll, place down a piece of turkey then top with ham. Next… top with a small scoop of stuffing followed by the cranberry, and then top with the dinner roll. Serve alongside some gravy dipping sauce to dunk these little sliders into.

NOTE…We put our slices of Ham and Turkey in the smoker to warm them up and to give them the added Yum factor of the Hickory wood flavor…can you say YUMMMMO !

Father's Day Sliders

Last Saturday my husband and I were in downtown Portland, we drove past Williams & Sonoma and they had a picture of sliders hanging in the window. I told my husband that we should make some for our Father’s day posting and so we started to think of things we could do. My husband came up with the spice mix for the ground beef, I thought of 2 sauces we could use on the buns and our daughter Trisha wanted caramelized onions on the third slider. These were so much fun to make and even more fun to eat, I have never had them before but I will most certainly have them again.

1 Lbs. - Ground Beef
1 Tsp. - Garlic (chopped)
1 Tsp. - Sweet Mesquite Seasoning

1/8 Tsp. - Johnny's Garlic Seasoning
1/8 tsp. - Ground Cinnamon
1/8 Tsp. - Thai Seasoning

Salt & Pepper
12 King Hawaiian Dinner Rolls

Caramelized Onions:

1/2 - Red Onion
2 Tbs. - Butter
1/2 Tsp. - Brown Sugar

Sauté the onions in the butter for about 20 minutes and then stir in the sugar and cook for another 10 minutes.

The Double Grilled Cheese Burger

We had a new restaurant here in Portland Oregon, open in April of this year called ‘The Grilled Cheese Grill”, I looked them up on-line and was able to see the menu, now how can you go wrong at a place that the entire menu of sammies that are some type of grilled cheese. My husband and I were very intrigued by this place; it was like being a kid all over again. That is until you read further down the menu; I was finding what I would consider to be very sophisticated grilled cheese sammies, along with some very creative dessert sammies. I knew that we had to go give this place a try for sure, again how could you not.... I read further down the menu to see something I knew immediately that I had to try. The Cheesus Burger, this monster of a burger has no bun; nope instead it has 2 grilled cheese sammies with each one having their own fillings and kind of cheese. After I regained my composure my husband and I made a date to go check this place out and experience the Cheesus Burger for ourselves. Last Friday night we headed out to the restaurant and when we arrived we were shocked to see that it was not a restaurant but a school bus and travel trailer. The trailer was the kitchen where all of the masterpieces are made and the school bus is the dining room, this place was so much fun. The bus has a mural painted on the ceiling and the tables have what look to be junior high school pictures covering the top of them, each table has a cup of trivia game cards for you to play while you wait for your order to be called out that its ready. This hip trendy place does not even give you a number, instead they give you basketball trading cards and the players name is what the cook will call out when your order is up. My husband took some great pictures of this place and of course The Cheesus Burger, so last night for dinner we made our own version that we lovingly called …

8 - Slices of White Bread
4 - Slices Bacon (cooked)
2 - 1/2 Lb. Burgers (cooked)
1 - Sliced Onion (caramelized)
10 - Sweet Chip Pickles (pat dry)
4 - Slices Pepper Jack Cheese
4 - Slices Colby Jack Cheese
Mayo
Butter

Butter all 8 pieces of bread on one side; lay 4 of them buttered side down on a hot (350 degree) electric grill. Top 2 of them with 1 piece each of pepper jack, onions and 1 piece of bacon broken into 2 pieces. Then another slice of pepper jack on top with another piece of bread, buttered side up. On the other 2 pieces of bread place 1 piece each of the Colby jack cheese, 5 pickles, 1 piece of bacon broken into 2 pieces then another slice of Colby jack and top with another piece of bread, buttered side up. Cook on each side until golden, crisp and the cheese is melted. On a plate set down one sammie and spread on some mayo then top it with the burger, on the other sammie spread on some mayo and place it on top of the burger mayo side down. Cut your burger in half and grab a pile of napkins.

Ultimate Bacon Chili Cheese Brats

On the way home today I had this HUGE desire for BBQ brats, not just plain old simple brats..oh no. I had visions of bacon, chili and cheese sauce. This was such a strong desire that I had to stop at the store on the way home so I could feed this craving. I love brats of any kind but OMG... having them all dressed up this way was out of this world GOOD!!!

2 - Stadium Rolls
2 - Cheddar Brats
4 - Slices of Bacon
1 Can - Chili with no beans
1 Can - Cheddar Cheese Soup

Cook the bacon and brats on the BBQ until the bacon is crispy and the brats are well heated, about 15 minutes on high. Warm the soup and chili in sauce pans over medium low heat while the bacon and brats are cooking. When everything is ready to assemble open a bun and place a brat inside, place 1 piece of bacon along each side of the brat. Ladle some chili over top and cover in the cheese sauce, grab a few napkins and enjoy!!

Paula Deen's Heart Attack Burgers

I was watching Paula Deen on the Food Network one day and could not believe what I saw her doing, but then at the same time I was really not surprised but I sure was intrigued. I looked through You Tube and was able to find this video clip to show my husband and he was shocked and amazed at what Paula was doing, but at the same time we both knew that we MUST give this recipe a try. I do confess that this had to be one of the best things I have ever eaten and probably the worst for me health wise.

2- ½ Lb - BBQ Burgers
4 Strips - Bacon (cooked)
2 Eggs - (fried)
4 - Krispy Kreme Donuts

Place one donut down on a plate and top it with 1 burger, then with 1 egg and then with 2 strips of bacon (break each strip into 2 sections) then top the entire thing with another donut. Sit back in awe on what you are just about to consume then raise it to your mouth and just go for it. The contrast between sweet and savory is just unbelievable and downright DELISH!!!

Teriyaki Burgers

We have been having some wonderful sunny days this week so my husband and I decided to crack open the BBQ and have some burgers, not just some plain old ordinary burgers mind you. Oh no, we pulled out all the stops and had some exceptionally flavorful, mouthwatering and juicy burgers. In all honesty I think this was the best burger we have ever created.

1 Lbs. - Ground Beef
3 Tbs. - Teriyaki Sauce
1 Tbs. - Honey
1 Tsp. - Sea Salt
3/4 Tsp. - Ground Ginger
2 Tbs. - Chopped Garlic
1 Tbs. - Pineapple Juice
1 - Egg
4 Tbs. - Panko Crumbs
2 Slices - White Cheddar
2 - Pineapple Rings
2 - Large Burger Buns (toasted)

In a bowl mix together the first 9 items; be careful not to over mix the meat. Separate into 2 large sections and form into burgers (best to form and throw on the BBQ or you might get by with putting them on wax paper, due to there stickiness). On a hot BBQ, cook on each side for about 10 minutes, when the meat is almost done place 1 piece of cheese onto each burger and put the pineapple rings on the grill to get some grill marks on both sides. When the meat is done, place a pineapple ring onto each burger, and each burger onto a toasted bun. Serve hot with chips or tater salad and an ice cold beer.

Chicken Salad

We finally had our first nice day of spring today (between the dark clouds and drizzle), so I wanted something to commemorate this sunny Sunday so I tried my hand at making my first ever chicken salad. I really just kind of threw things together that I have had in various types of salad and my husband created a sauce that he thought would complement the ingredients well. Our daughter is home from Denver for spring break so she got to be our taste tester....she thought it was awesome!!!

½ C. - Chopped Cashews
1 - Lemon Pepper Rotisserie Chicken Breast
1 C. - Sliced Red Seedless Grapes
1 - Small Diced Gala Apple
2/3 C. - Miracle Whip
2 Tsp. - Lemon Juice
2 Tsp. - Honey
2 Tsp. - Dijon Mustard
1/8 Tsp. - Paprika
Salt & Pepper

Dice the chicken into a mixing bowl; toss it with the grapes, apples, and nuts. In another bowl mix together the ingredients for the sauce and season to taste. Combine the sauce with the chicken mixture until fully combined. Serve cold either on crackers as a snack, on bread for a Sammie or as we did in hollowed out apples for a light lunch.

The Dunkin Ultimate Peanut Butter Sammie

While blogging one afternoon I came across the one of the most creative sites, Peanut Butter Boy. He is having an ultimate peanut butter sandwich recipe contest. As soon as I read it I had to call my husband and tell him all about his opportunity to share with everyone his ultimate sandwich. He has been telling me for a while know about his love of a Sammie that consists of peanut butter, miracle whip, bacon and sweet pickle chips...I of course thought, yuck but he insists that it is absolutely wonderful.

This recipe is for 1 Sammie:

Hoagie Roll
2 - Thick Slices of Cooked Bacon
4 Tbs. - Crunchy or Creamy Peanut Butter ( He used crunchy)
3 Tbs. - Miracle Whip
Sweet Chip Pickles ( He used 8 )

Cut open your bread and on one side spread on the peanut butter and on the other side the miracle whip. Place the bacon on top of the miracle whip and the pickles on top of the peanut butter. This Sammie is big enough to eat as a meal or a light snack for two to enjoy.

The Ultimate French Toast

Every Saturday my husband and I go to breakfast with his parents, brother and wife, so on Sunday we cook breakfast at home. We do anything from a simple bowl of cereal or oatmeal to Belgian waffles and scrambles. This Sunday we took it a little further and did a cross between French toast and my all time favorite Sammie, a Monte Cristo. Wow... this had to have been the best breakfast Sammie/French toast I have ever had. I really hope you decide to give this one a try at your house on Sunday morning; it will be a big hit.

4 – Slices Texas Toast
4 – Slices Canadian Bacon
4 – Slices Monterey Jack Cheese
1 – Egg
½ C. - Refrigerated Nondairy French Vanilla Creamer

On four slices of the toast place two pieces of bacon and two pieces of cheese, top with the other slice of toast. In a shallow bowl mix the egg and creamer together, dip one at a time the Sammie’s into the egg mixture. On a hot griddle coated with cooking spray cook the French toast on each side for 2-3 minutes or until cheese is melted and the Sammie is golden brown. Sprinkle with powder sugar if desired; serve with your favorite jelly or jam.

Dunkin Clubs

When we went to the store the other day we came across the best looking and extremely soft hoagie rolls, my husband’s big down fall is good soft bread. He picked up the bag of rolls and we immediately starting to banter back and forth on what we could display on the beautiful rolls. Many ideas crossed our minds but the final winner is what we are calling Dunkin Clubs, they turned out better than any Sammie I have had out. I would defiantly say it was a two thumbs up winner! Or how Guy F. would say…a winner winner Sammie dinner.

2 - Hoagie Rolls (split open)
½ - Onion (caramelized)
4 Slices - Bacon (cooked)
4 Slices - Deli Honey Ham
8 Slices - Deli Smoked Turkey
8 Slices - Colby Jack Cheese
4 Tbs. - Whipped Cream Cheese
3 Tbs. - Kraft Dijonaise
1 - Roma Tomato
Shredded Lettuce

In a small dish mix the cream cheese and Dijonaise together, lay open the bread on a cookie sheet and spread each section with some of the cream cheese mixture. On top of the cream cheese lay out 4 ham slices and 4 turkey slices then top that with 2 strips of bacon, place some of the onions on top of the bacon and cover it with 2 slices of cheese. Place the Sammie’s under the broiler to melt the cheese and crisp the bread. When the Sammie’s are done pull them out of the oven and top with the lettuce and tomato. Place the top section on and slice diagonally. Serve with some fruit and you will have one great simple lunch or supper.

BLTT

This is my first of three installments using turkey leftovers, my husband and I put our heads together to create something new or at least new to us and something we thought would be really tasty. I think we did an excellent job with creating what we called BLTT, bacon, lettuce, tomato, turkey sammie’s. After we decided on the base of what the sammie would be we wanted to dress it with something other than mayo along with using more of our leftovers, so we matched cream cheese with some cranberries and it turned out great.

2 Large Croissants
4 Slices of Bacon
4 Slices of Turkey Breast
2 Slices of Swiss Cheese
3 oz. Cream Cheese (soft)
2 Tbs. Cranberry Sauce (whole or jelly)
1 Tomato (sliced)
Lettuce

Cook the bacon until crisp over medium high heat, while the bacon cooks place 2 slices of overlapping turkey portions onto a cookie sheet and the other portion on the opposite end of the sheet. When the bacon is done remove from the pan and drain on paper towel, lay 2 slices of bacon onto each portion of turkey. Place a piece of cheese on top of the bacon and place under a heated broiler until melted and brown. Mix the cream cheese and cranberries then spread onto both halves of the croissant. Slice the tomato and shred some lettuce, when the cheese has melted and browned remove from the oven and place a portion of turkey onto one half of the croissant and top with tomato and lettuce then top with the other half of croissant, serve with a bowl of soup and enjoy.

Our Philly Cheese Steak Sammies

1 Beef roast (Size depends on your family)
2 Boxes (8cup) of beef broth (Or enough to cover the meat)
1 Medium onion chopped
1 Medium onion sliced
3 Tbs. chopped garlic

Season to taste (I used Salt, Pepper, Garlic powder & Montreal Steak Season)

Hamburger buns or Hoagie rolls

Cheese Sauce :

1 Can Cheddar cheese soup
1/2 Cup Cubed Velveeta cheese
1 Cup Milk

Place half of the chopped onion in the bottom of a crock pot, place the roast on top of the onion and place the rest of the onion on top of the meat. Cover the meat with the broth and add your seasoning. Cover and cook on high for 5 hours. After 5 hours take the meat out and drain of the juice leaving about 2 Cups behind (to keep the meat moist). Shred the beef and place back into the crock pot on low for another 4 hours. Just before you are ready to serve sauté the sliced onion in a mix of extra virgin olive oil and butter, cook until soft. In a sauce pan heat the soup, milk & Velveeta on medium low being careful not to burn the sauce.
Split open the bun and place down some meat, sautéed onion, cheese sauce and the top bun. Serve with a simple salad and fruit.
